Ingredients

  • 2 lbs beef chuck, diced into cubes
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 3 stalks celery, chopped
  • 3 medium carrots, peeled and chopped
  • 4 cups beef broth
  • 1 cup water
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.

  2. Add beef and cook until browned on all sides, about 5-7 minutes.

  3. Add garlic, onion, celery, and carrots. Cook for about 5 minutes until vegetables are slightly tender.

  4. Add beef broth, water, bay leaves, thyme, salt, and pepper. Bring to a boil then reduce heat and let simmer for about 2 hours until beef is tender.

  5. Remove bay leaves and serve hot.
