Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup reduced-fat creamy peanut butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup granular no-calorie sweetener
  • 1 egg
  • 1/2 tsp vanilla extract
  • 8 chocolate kisses, unwrapped

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.

  2. In a small bowl, whisk together flour, baking soda, and salt.

  3. In a separate bowl, beat together peanut butter, applesauce, and sweetener until creamy. Add egg and vanilla and mix well.

  4. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.

  5. Roll dough into 8 balls and place them on the prepared baking sheet. Use a fork to flatten each ball, making a criss-cross pattern on the top.

  6. Bake for 8-10 minutes, until edges are lightly browned.

  7. Remove from oven and immediately press one chocolate kiss into the center of each cookie.

  8. Allow to cool before serving.
