Ingredients

  • 6 eggs
  • ¼ cup sugar
  • ¼ tsp salt, optional
  • 1 quart milk, divided
  • 1 tsp vanilla
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon

Instructions

  1. Beat together eggs, sugar, and salt in a large saucepan.

  2. Stir in two cups of milk.

  3. Cook over low heat, stirring constantly until the mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160 degrees F.

  4. Remove from heat. Stir in the remaining two cups of milk and vanilla.

  5. Cover and refrigerate until thoroughly chilled for several hours or overnight.

  6. Serve garnished with whipped cream and nutmeg.
