- 2small celery ribs
- 2tbsponion,minced
- 1medium green heirloom tomato
- ½tsplemon zest,finely grated
- 1tspfresh lemon juice
- salt
- 1½lbsred tomatoes,chilled
- ½cupvodka,chilled
- 1cupice cubes
- 1tsptomato paste
- ½small red chili
- ½tspcelery salt
- 4medium celery ribs
- thin green chilies
Instructions

In a bowl, toss the celery with the onion, tomato, lemon zest, and juice and season with salt. Refrigerate while making the drinks.

In a blender, puree the tomatoes, vodka, ice, tomato paste, chile, and celery salt; pour into glasses. Spoon the garnish on top, add a celery rib and chile to each glass, and serve.
