Sweet Potato Chicken Pie Recipe

Instead of using regular potatoes, try adding sweet potatoes to your chicken pie. Sweet potatoes are healthier than your usual white potatoes. Also, they’ve got a naturally sweet flavor that’s perfect for this chicken pie recipe.


Skip the traditional pastry crusted pie and throw in a healthier alternative by replacing it with a seasoned sweet potato crust that goes well with the filling.

Ingredients

  • 36 oz sweet potaotes, soft, cooked
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt, optional
  • 2 tbsp butter, melted
  • 1 tbsp sherry, optional

Filling

  • 2 tbsp butter
  • 1 medium onion, sliced or minced
  • 6 oz mushrooms, or 2 cans, drained, sliced
  • ½ cup olives, optional, quartered large stuffed
  • 1 can Cream of Mushroom , or Celery soup, undiluted
  • dash pepper
  • 2 cup chicken, cubed

Instructions

  1. Mash soft sweet potatoes while adding spices with melted butter and sherry.

  2. Line a 9 inch pie plate and pour in the mixture. Building up the edges.

Filling

  1. Sauté minced onion in skillet with butter until tender.
  2. Add mushrooms with their liquid and the remaining ingredients, stirring occasionally.
  3. Pour mixture into sweet potato pie crust.

  4. Bake 30 minutes in 350 degrees F oven.
