When I think of lemons, normally I think of lemonade, especially in the summer. Mix lemon up a little with this quick and easy lemon pie recipe.


How To Make Lemon Pie

A slice of lemon pie satisfies the sweet tooth with a bit of citrusy tang.

Ingredients

  • 1 lemon
  • 4 eggs
  • ½ cup butter
  • 1 tbsp vanilla extract
  • 1 ½ cup sugar
  • 2 Tbsp. cornstarch
  • 1 pkg. pie crust dough

Instructions

  1. Preheat oven to 350 degrees F.

  2. Cut lemon into small chunks.
  3. Blend it until it is almost smooth.
  4. Add eggs, butter, vanilla, sugar, and cornstarch.
  5. Mix until smooth and creamy.
  6. Pour the mixture on the unbaked pie crust and bake for 35 to 40 minutes.
