Ingredients

  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 cup light corn syrup, preferably Karo
  • 2 tbsp unsalted butter, preferably Land O'Lakes, softened
  • 1 tbsp all-purpose flour, heaping
  • 1 tsp pure vanilla extract
  • 1 cup pecans, coarsely chopped
  • 1 crust pie crust, unbaked homemade or commercial, preferably Pillsburry

Instructions

  1. Preheat the oven to 350 degrees F.
  2. If using a homemade crust, prepare the pie crust by placing it into an ungreased, regular 9-inch glass pie plate and fluting the edges.
  3. Whisk the eggs together, then whisk in the sugar.
  4. Stir in the corn syrup and the softened butter; mix well.
  5. Add the flour and the vanilla; combine well.
  6. Fold in the pecans.
  7. Pour mixture into the unbaked pie shell and bake at for about 55 to 60 minutes or until a knife inserted into the center comes out clean.
  8. Shield the outside edges of the pie with a pie shield or aluminum foil about halfway through cooking to prevent over-browning.
  9. Let the pie cool down completely, slice, then serve!

Recipe Notes

  • Toast pecans for extra flavor
  • Don't use a blender or a mixer for mixing. Use a whisk and a wooden spoon and hand mix only to avoid overbeating which will cause the pie to be runny.
