How To Make Pick-Me-Up Muffins
You can start your day with a tasty treat that will perk you up too if you have this muffins recipe that’s loaded with juicy raisins and some coffee kick.

Ingredients
- 1cupraisins
- 1cuphot coffee,strong brewed
- 2½cupsall purpose flour
- ½cupsugar
- 1tbspbaking powder
- ½tspcinnamon
- ½tspkosher salt
- 1cupmilk
- 8tbspunsalted butter
- 1large egg
- 1½tspvanilla
- 1tspinstant espresso granules or instant coffee
- ½cupwalnuts,chopped

In a medium bowl, combine raisins and hot coffee; allow to steep 30 minutes. Strain out liquid; set raisins aside.

Preheat oven to 400 degrees. In a large bowl, combine flour, half a cup sugar, baking powder, cinnamon, and salt. In another bowl, whisk together milk, butter, egg, vanilla, and coffee granules until blended.

Spoon batter into 12 paper-lined muffin cups. Sprinkle with remaining 3 tablespoons sugar.

Bake for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean. Serve warm straight from pan.
