How To Make Loaded Baked Omelet Muffins

Serve these wonderful baked omelet muffins for breakfast using only simple ingredients and without fuss. These muffins cook for 30 minutes.

  • nonstick cooking spray
  • 9whole eggs,large
  • ¼tspkosher salt
  • black pepper
  • 3stripscooked chopped bacon
  • 3tbspthawed frozen spinach,drained
  • 3tbspdiced tomatoes
  • 3tbspdiced onion
  • 3tbspdiced bell pepper
  • 2ozshredded cheddar


  1. Preheat the oven to 350 degrees F. Spray the muffin tins with cooking spray.

  2. In a large bowl whisk the eggs, season with salt and pepper.

  3. Mix in the remaining ingredients.

  4. Fill  and place tins on a cookie sheet and bake 20 to 25 minutes, until set.
