For Light Whipped Topping:
- 2tbspsugar
- ½cupheavy whipping cream
- ½tspvanilla
- ½cupGreek yogurt,fat free, plain
For Parfaits:
- 2â…”cupspineapple,fresh or canned, diced
- 2â…”cupsmandarin oranges,jarred, drained
Instructions
Light Whipped Topping:

Place a metal mixing bowl and metal beaters of a hand mixer into the freezer for 10 to 15 minutes.

Place the sugar into the mixing bowl, then add the whipping cream.

Using a hand mixer, beat for about 2 to 3 minutes until the cream and vanilla reach stiff peaks. Fold in the Greek yogurt.
To Assemble:

In 8-ounce jars or clear plastic cups, place â…“ cup of mandarin oranges in each, then â…“ cup pineapple.
