Ingredients

For Light Whipped Topping:

  • 2tbspsugar
  • ½cupheavy whipping cream
  • ½tspvanilla
  • ½cupGreek yogurt,fat free, plain

For Parfaits:

  • 2⅔cupspineapple,fresh or canned, diced
  • 2⅔cupsmandarin oranges,jarred, drained

Instructions

Light Whipped Topping:

  1. Place a metal mixing bowl and metal beaters of a hand mixer into the freezer for 10 to 15 minutes.

  2. Place the sugar into the mixing bowl, then add the whipping cream.

  3. Using a hand mixer, beat for about 2 to 3 minutes until the cream and vanilla reach stiff peaks. Fold in the Greek yogurt.

To Assemble:

  1. In 8-ounce jars or clear plastic cups, place ⅓ cup of mandarin oranges in each, then ⅓ cup pineapple.

  2. Top each with 3 tablespoons of whipped cream, serve, and enjoy!
