How To Make Berry Fool with Black Pepper

Level up your fruit desserts with a serving of this sweet-tart berry fool! It has added black pepper for a hint of spice to balance out the rich sweetness.

Serves:

Ingredients

  • 1cupfresh raspberries,(6 oz)
  • ½cupsugar
  • 1tspfresh ground black pepper
  • 3tbspgrand marnier,or other orange liqueur
  • cupsheavy cream
  • 1lbstrawberries,(1 quart)

Instructions

  1. In a small saucepan, combine the raspberries and sugar. Cook over low heat, covered, stirring occasionally, for about 5 to 10 minutes, until the berries are soft and the sugar dissolved.

  2. Strain into a medium bowl, pressing the berries to get all the juice. Stir in the pepper.

  3. Chill for about 20 minutes until completely cold. Stir in the Grand Marnier.

  4. In a large bowl, beat the cream just until it holds firm peaks when the beaters are lifted. Fold in the raspberry mixture and the halved strawberries until just combined.

  5. Serve in stemmed glasses or bowls, topped with the reserved whole strawberries, and enjoy!
