Ingredients

  • cupsflour
  • ¼cupcornstarch
  • 1tbsppumpkin pie spice
  • 1tspbaking powder
  • 2tspbaking soda
  • ½tspsalt
  • ¾cupvegetable oil
  • 2cupswhite sugar
  • 4eggs,slightly beaten
  • 15ozpumpkin puree

Instructions

  1. Preheat oven to 350 degrees F. Line muffin tins with paper liners.

  2. In a medium bowl combine flour, cornstarch, pumpkin pie spice, baking powder, and salt.

  3. In a large bowl beat the oil, sugar, eggs, and pumpkin puree together with a hand blender to mix. Next, add the dry ingredients and continue to blend well for about a minute more.

  4. Pour batter into lined muffin tins about ⅔ full then bake for 25 minutes or until a toothpick comes out clean.

  5. Allow to cool completely before frosting.
