How To Make Sweet Potato Chocolate Chip Cookies
Classic chocolate cookies take on a more fall-appropriate flavor with the use of sweet potatoes, and warm spices like nutmeg & cinnamon, in this recipe.

Ingredients
- ¾cupsugar
- ½cupmashed sweet potato
- ¼cupvegetable oil
- 1egg,large
- 1¾cupsflour
- ½tspbaking powder
- ½tspbaking soda
- 1tspcinnamon
- ¼tspnutmeg
- ¼tspsalt
- 1cupsemi-sweet chocolate chips
Instructions

In a large bowl whisk together the sugar, pureed sweet potato, vegetable oil and egg until smooth.

Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.

Add the sifted dry ingredients and whisk together until just combined.

Fold in half the chocolate chips.

Cover and refrigerate for 1 hour.

Pre-heat oven to 350 degrees F.

Scoop 2 tablespoon-sized scoops of cookie dough and press 2 to 3 chocolate chips into the top of each one to use the remaining chocolate chips.

Place onto baking sheets 2 inches apart and bake for 10 to 12 minutes or until edges just start to brown.
