  • 1 1/2 cups almond flour
  • 1/2 cup shredded coconut
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup coconut oil
  • 1/4 cup low carb sweetener
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. Combine almond flour, shredded coconut, baking powder, and salt in a bowl.

  3. In a separate bowl, mix coconut oil, sweetener, egg, and vanilla extract.

  4. Add the dry ingredients into the wet ingredients and mix until combined.

  5. Using a tablespoon, scoop out the dough and place on a lined baking sheet.

  6. Flatten each cookie with the back of a fork.

  7. Bake for 12-15 minutes or until golden brown.

  8. Remove from oven and let cool for 5 minutes before serving.
