
How To Make Boston Cream Pie Cookies
Turn the classic boston cream pie into soft cookies with this easy recipe! It’s made with a layer of custard and chocolate ganache for a sweeter treat.

Ingredients
For Cookies:
- 1boxyellow cake mix
- 2eggs
- ½cupoil
For Custard:
- ½cupsugar,divided
- 2cupsmilk
- 1tspvanilla
- 4egg yolks
- 6tbspcornstarch
For Chocolate Ganache:
- 4ozsemi-sweet chocolate
- ½cupheavy cream
Instructions
Cookies:

Preheat the oven to 350 degrees F.

Mix the cake mix, eggs, and oil in a large bowl. Divide the dough into 20 even pieces, roll into balls, and place on a parchment-lined pan.

Bake for 6 to 8 minutes or just until done. Cool completely.
Custard:

Over medium heat in a pot, combine the milk and ¼ cup sugar. Bring just to a boil.

In a small bowl, whisk the egg yolks with ¼ cup of sugar and vanilla. Add in the cornstarch until completely mixed and smooth.

Add 1 cup of the hot milk to the yolks, then stir well. Pour the yolk mixture back into the pot, and whisk continuously over medium heat until the mixture thickens.

Cool slightly in the pot, stir and cool completely in the fridge.
Chocolate Ganache:

Heat the heavy cream on a bowl in the microwave just until boiling. Pour over the chocolate chips, then stir to combine.

Spread a generous amount of cold custard on each cooled cookie. Dip into the chocolate and let set.
