Serves:
Ingredients
- 2 cups fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a medium-sized bowl, combine the cranberries, granulated sugar, cornstarch, and vanilla extract. Mix well until the cranberries are coated. Transfer the cranberry mixture to a greased baking dish.
-
In a separate bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Mix well to combine. Add the cold butter pieces and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture is crumbly.
-
Sprinkle the crumb mixture evenly over the cranberry filling in the baking dish.
-
Place the baking dish in the preheated oven and bake for about 40 minutes, or until the cranberry filling is bubbly and the topping is golden brown.
-
Remove the cranberry cobbler from the oven and let it cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
