How To Make Strawberry Shortcake Cheesecake Dome

Made with fresh strawberries and cream cheese surrounded with jam-filled fluffy dome cake, this strawberry shortcake cheesecake is a whole new level of yum!

Ingredients

  • 4eggs
  • cupssugar,divided
  • 3tspvanilla extract,divided
  • ¾cupflour
  • tspbaking powder
  • 1tspsalt
  • 16ozcream cheese,room temperature
  • ½cupheavy whipping cream,cold
  • ½cupstrawberry jam
  • 2cupsfresh strawberry,sliced

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Whisk together eggs, ¾ cups of sugar, and 1 teaspoon of vanilla until pale and fluffy.

  3. Into the mixture sift in the flour, baking powder, and salt. Mix until just combined.

  4. Pour the sponge cake batter onto a 10×15-inch baking sheet lined with parchment paper and bake for about 10 to 12 minutes. Allow cooling.

  5. In a mixing bowl beat together cream cheese, ½ cup of sugar, and 2 teaspoons of vanilla extract. Add in heavy cream and beat until light and fluffy. Set aside.

  6. Cutting widthways, cut the cooled cake into 4 equal rectangles.

  7. Spread the jam onto 2 rectangles. Then place the two rectangles together and top with a rectangle without any jam.

  8. Transfer the stack of cake with jam onto a cutting board. Cut in half longways. Then cut widthways into ½-inch thick slices. The cut pieces of cake should be about the square in shape.

  9. Arrange the sliced pieces on cake into a medium sized bowl lined with cling film. Alternate the direction the lines are facing to create a checkered like pattern. As you reach the edges of the bowl, you may need to cut the pieces to fit.

  10. Fill the cake with the cheesecake filling. Spreading evenly.

  11. Arrange the strawberries on top making sure they slightly overlap each other.

  12. Cover the cake with slices of the 4th piece of cake. Wrap the exposed cake with cling film and refrigerate for about 4 hours.

  13. To serve, unwrap the bottom layer of the cake, and place a plate on top. Flip the plate and carefully remove the bowl, and the remaining cling film. Slice, serve, and enjoy!
