Ingredients

  • 1/2 cup Crisco
  • 1 stick butter
  • 2 cup sugar
  • 5 egg yolks
  • 2 cups flour
  • 1/2 tsp. baking soda
  • pinch salt
  • 1 cup buttermilk
  • 1 cup Angel Flake coconut
  • 5 egg whites, beaten until stiff

Crème Cheese Frosting:

  • 8 oz cream cheese
  • 1 stick butter, melted
  • 1 tsp. vanilla
  • 1/2 cup pecans
  • 2 1/2 cup powdered sugar

Instructions

  1. Beat Crisco and butter well.
  2. Add sugar gradually and cream well.
  3. Add one egg yolk at a time, beating well.
  4. Sift together flour, baking soda, salt.
  5. Add alternately with buttermilk.
  6. Stir in coconut.
  7. Fold egg whites into batter.
  8. Pour into three 9
  9. Bake at 350 degrees for 20-25 minutes.
  10. Cool before frosting.
  11. To make frosting, using a mixer, mix until smooth.
  12. Frost cooled cake.
