  • cupswhite sugar
  • 1butter stick
  • 1tspvanilla extract
  • 3eggs
  • 1⅔cupsall purpose flour
  • 2tspbaking powder
  • tspsalt
  • cupsrhubarb,diced
  • 1apple,thinly sliced
  • cupalmonds,sliced, or to taste
  • 1pinchwhite sugar,or to taste

Instructions

  1. Preheat the oven to 400 degrees F. Grease a 9-inch round pan.

  2. Beat 1¼ cups sugar and butter together using an electric mixer until well blended, light, and fluffy.

  3. Add eggs, one at a time, followed by vanilla extract, mixing well after each addition.

  4. Turn mixer to low speed and slowly add in flour, baking powder, and salt, mixing just until combined. Fold in rhubarb.

  5. Pour batter into the prepared baking pan. Smooth the top and place apple slices in a circular pattern on the batter.

  6. Sprinkle almonds and additional sugar on top.

  7. Bake in the preheated oven for 35 to 45 minutes until a toothpick inserted into the center comes out clean.

  8. Let cool, and serve warm or cold.
