How To Make Date Cake with Peanut Butter Frosting

Ingredients
- 1 cup dates, pitted and chopped
- 1 tsp baking soda
- 1 cup water, boiling
- 1 cup sugar
- 2 ½ cup flour
- 1 cup walnuts, chopped
- 1 egg
- 1 tsp vanilla extract
- 1 pinch salt
- 1 tbsp butter
Peanut Butter Frosting
- ½ stick butter , or margarine, softened
- 1 cup peanut butter, creamy
- 3 tbsp milk , or as much as needed
- 2 cup powdered sugar

Preheat oven to 350 degrees F.

Grease and flour 9x13 glass baking dish.
- Put dates and baking soda in a bowl, and pour boiling water on top. Set aside.
- In a large mixing bowl, mix together sugar, flour and walnuts.
- Add egg, vanilla, salt and butter.
- Mix until combined.
- Stir in dates with liquid. Mix well.
- Pour batter into prepared pan.

Bake for 30-35 minutes at 350 degrees F.
- Cake will pull away from sides of pans and be golden brown. Cool.
Peanut Butter Frosting

Beat butter and peanut butter in a medium bowl with electric mixer until smooth.
- Gradually mix in the powdered sugar, adding milk when mixture gets thick.
- Once frosting is thick and spreadable, beat 3 minutes until fluffy.
- This is sweet so only a thin layer on the cake is needed.
- Use crunchy peanut butter for another unique taste.
