How To Make Date Cake with Peanut Butter Frosting
A sweet date cake topped with a homemade peanut butter frosting.
- 1 cup dates (pitted and chopped )
- 1 tsp baking soda
- 1 cup water (boiling )
- 1 cup sugar
- 2 ½ cup flour
- 1 cup walnuts (chopped )
- 1 egg
- 1 tsp vanilla extract
- 1 pinch salt
- 1 tbsp butter
Peanut Butter Frosting
- ½ stick butter (or margarine, softened)
- 1 cup peanut butter (creamy )
- 3 tbsp milk (or as much as needed)
- 2 cup powdered sugar
Preheat oven to 350 degrees F.
Grease and flour 9×13 glass baking dish.
- Put dates and baking soda in a bowl, and pour boiling water on top. Set aside.
- In a large mixing bowl, mix together sugar, flour and walnuts.
- Add egg, vanilla, salt and butter.
- Mix until combined.
- Stir in dates with liquid. Mix well.
- Pour batter into prepared pan.
Bake for 30-35 minutes at 350 degrees F.
- Cake will pull away from sides of pans and be golden brown. Cool.
Peanut Butter Frosting
Beat butter and peanut butter in a medium bowl with electric mixer until smooth.
- Gradually mix in the powdered sugar, adding milk when mixture gets thick.
- Once frosting is thick and spreadable, beat 3 minutes until fluffy.
- This is sweet so only a thin layer on the cake is needed.
- Use crunchy peanut butter for another unique taste.
