Crushed Pineapple Pound Cake Recipe

This pineapple pound cake recipe is a delicious twist to a familiar cake. Pound cakes are usually soft and buttery but the pineapples help add some acidity and sweetness. If you like, you can top it with store-bought or homemade icing or glaze.


How To Make Crushed Pineapple Pound Cake

Ingredients

  • 1 lb. butter
  • 1 lb. powdered sugar
  • 6 eggs
  • 3 cups flour, sifted
  • 20 oz. pineapple, crushed

Instructions

  1. Cream the butter and the sugar together until fluffy.
  2. Add the eggs and the flour. Mix well.
  3. Drain the pineapple and fold it into the batter.

  4. Pour the batter in a tube form pan.

  5. Bake at 350 degrees in the oven for 1 hour and 15 minutes.

  6. If you want to ice or glaze it, wait until it cools to do so. Serve once cooled.
