Zucchini may sound like an unlikely ingredient in a cake recipe. However, in this chocolate zucchini cake recipe, it adds flavor and texture to a regular chocolate cake.


How To Make Chocolate Zucchini Cake

Ingredients

  • 2 cup zucchini, finely chopped
  • ¼ cup cocoa
  • 2 ½ cup all purpose flour
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • ½ cup butter , or margarine
  • 2 eggs
  • ½ cup vegetable oil
  • 1 ½ cup granulated sugar
  • ½ cup sour milk
  • 2 tsp. cinnamon
  • 1 tsp. vanilla

Instructions

  1. Cream butter, oil, sugar and eggs together until well blended.
  2. Sift dry ingredients together and add to creamed mixture alternately with sour milk, beginning and ending with flour mixture.
  3. Beat well and add zucchini.
  4. Bake at 350 degrees in a greased 13x9x2 inch pan for 30 minutes.

Recipe Notes

Variation: Sprinkle top of above cake with 1/2 C. chocolate chips before baking.
