Zucchini may sound like an unlikely ingredient in a cake recipe. However, in this chocolate zucchini cake recipe, it adds flavor and texture to a regular chocolate cake.
How To Make Chocolate Zucchini Cake
- 2 cup zucchini (finely chopped )
- ¼ cup cocoa
- 2 ½ cup all purpose flour
- ½ tsp. baking powder
- 1 tsp. baking soda
- ½ cup butter (or margarine)
- 2 eggs
- ½ cup vegetable oil
- 1 ½ cup granulated sugar
- ½ cup sour milk
- 2 tsp. cinnamon
- 1 tsp. vanilla
- Cream butter, oil, sugar and eggs together until well blended.
- Sift dry ingredients together and add to creamed mixture alternately with sour milk, beginning and ending with flour mixture.
- Beat well and add zucchini.
Bake at 350 degrees in a greased 13x9x2 inch pan for 30 minutes.
Variation: Sprinkle top of above cake with 1/2 C. chocolate chips before baking.
