How To Make Blueberry Buckle

Every slice of this blueberry buckle is a soft, zesty treat packed with fresh blueberries! It’s topped with a cinnamon streusel for a tastier dessert.

Ingredients

  • ¾cupwhite sugar
  • ¼cupbutter
  • 1egg
  • 2tsplemon zest
  • cupsflour
  • 2tspbaking powder
  • ½tspsalt
  • ½cupmilk
  • 1tbspflour
  • cupsfresh blueberries

For Topping:

  • ¼cupbutter,plus 1 tbsp
  • ¼cupbrown sugar
  • ¼cupwhite sugar
  • cupall-purpose flour
  • ½tspground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F. Grease an 8×8-inch pan.

  2. In a large bowl, cream the sugar, butter, egg, and lemon zest until fluffy.

  3. In a separate bowl, combine the flour, baking powder, and salt. Add them to the sugar mixture, alternating with the milk mixture just until combined.

  4. Toss the blueberries with 1 tablespoon of flour, then fold the blueberries into the batter. Spread the mixture in a prepared pan.

Topping:

  1. Combine butter, brown sugar, white sugar, flour, and ground cinnamon in a small bowl until crumbly.

  2. Sprinkle the topping over the batter.

  3. Bake for 40 to 45 minutes or until a toothpick comes out clean.

  4. Serve warm, and enjoy!
