Ingredients

  • cupall-purpose flour
  • ¼cupsugar,granulated
  • ¼tspbaking powder
  • tspcinnamon
  • 1pinchsalt
  • ½banana,overripe, mashed very well, scant 1/4 cup
  • 1tbspvegetable oil
  • 1tbspapplesauce
  • 1tbspbuttermilk
  • 1largeegg yolk
  • ¼tspvanilla extract
  • 1recipecream cheese frosting,recipe follows
  • 1tbsppecans,chopped, or walnuts, optional
  • banana slices,optional

For Simple Cream Cheese Frosting:

  • tbspcream cheese,softened
  • 4tbspsugar,powdered

Instructions

To Make Cream Cheese Frosting:

  1. In a small mixing bowl, using a fork, whisk together softened cream cheese and powdered sugar until smooth. Set aside.

To Make Banana Mug Cake

  1. In a large mug, whisk together the flour, sugar, baking powder, cinnamon, and salt.

  2. Add in the mashed banana, vegetable oil, applesauce, buttermilk, egg yolk, and vanilla. Stir the mixture until well-blended. Be sure to mix in the flour at the bottom of the mug well.

  3. Cook the mixture in the microwave on high power for 2 ½ to 3 minutes until done. Be careful not to overcook, or your cake may be spongy.

  4. Dollop with Cream Cheese Frosting, sprinkle with optional nuts, then garnish with optional banana slices. Enjoy warm as once mug cakes cool, they aren’t quite as good.
