How To Make Banana Coffee Cake
Enjoy a plate of this moist and buttery coffee cake for tea time, packed with sweet bananas, and topped with a crisp pecan and brown sugar streusel.

Ingredients
- ½cupvegetable oil
- 1cupsugar
- 2large eggs,beaten
- 1cupbanana,ripe, mashed
- ¼cupsour cream
- 1tspvanilla extract
- 1½cupsflour
- 1tspbaking soda
- 1tspbaking powder
- 1cuppecans,chopped
For Streusel Topping:
- ½cuppecans,chopped
- ¼cupbrown sugar,packed
- 1tspground cinnamon
Instructions

Preheat the oven to 350 degrees F, then spray a springform pan with baking spray.

Whisk together the sugar, oil, eggs, banana, sour cream, and vanilla extract in a large bowl together, until smooth.

Sift the flour, baking soda and baking powder in a second bowl, then add it to the wet mixture. Whisk until just combined.

Mix the pecans, brown sugar, and cinnamon in a bowl, then sprinkle it over the cake batter.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
