How To Make Quinoa Crunch Snack Bars
Enjoy bites of these sweet crunch snack bars loaded with quinoa, oats, dates, and chia seeds bind together by sweet honey, for a rich and healthy snack!

Ingredients
- 5medjool dates,pitted
- 1cupold fashioned whole rolled oats
- ¾cupquinoa,uncooked
- ½cupalmonds,coarsely chopped
- ½cuppepitas,pumpkin seeds
- 1tbspchia seeds
- ½cupalmond butter
- ⅓cuphoney
- 1tsppure vanilla extract
- ¼tspsalt
- 2ozsemi sweet chocolate,or bittersweet, melted
Instructions

Preheat the oven to 300 degrees F. Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides. Set aside.

Pulse the dates in a food processor until they form a chunky paste. Transfer to a medium bowl.

Add the oats, quinoa, almonds, pepitas, chia seeds, almond butter, honey, vanilla extract, and salt. Stir everything together until evenly combined.

Transfer mixture to a prepared baking pan and press very firmly into an even layer.

Bake for 20 to 22 minutes, or until lightly browned on the edges.

Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour.

Remove the bars from the pan using the overhang on the sides and cut into bars. Drizzle with chocolate before or after cutting.

Individually wrap each bar in plastic wrap or parchment, then serve and enjoy!
