How To Make Bolo de Fubá Cornmeal Cake

Try making a classic Brazilian cornmeal cake that’s great for dessert or breakfast! This cake is sweeter and moister than cornbread but tastes just like it!

Serves:

Ingredients

  • 3cupsskim milk
  • 4largeeggs
  • 1 ½cupscornmeal,yellow, coarse
  • 1 ½cupsgranulated sugar
  • 1 ½tbspall-purpose flour
  • 2 ½tbspunsalted butter,melted
  • 1tbspbaking powder
  • 2tbspParmesan cheese,grated
  • baking spray

Instructions

  1. Preheat oven to 350 degrees F.

  2. Spray a 13x9x2-inch baking pan with baking spray.

  3. Add milk, eggs, cornmeal, sugar, flour, and butter to blender.

  4. Mix all ingredients for about 1 minute, or until blended well.

  5. Then add baking powder and grated Parmesan cheese and blend on lowest setting or pulse for a few seconds.

  6. Pour mixture into baking pan and bake at 350 degrees F for 50 minutes, or until golden brown.

  7. Remove from oven and let cool for 30 minutes before serving.

  8. Cut into 21 pieces, then serve. Enjoy!
