Ingredients

  • 1 lb of octopus
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup of olive oil
  • 2 tbsp of red wine vinegar
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 1/4 cup of chopped parsley

Instructions

  1. Clean and rinse the octopus, then boil for 30 minutes until tender. Cut into small pieces.

  2. In a bowl, mix together the red onion, red and green bell pepper slices, and chopped parsley.

  3. In a separate bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.

  4. Add the octopus pieces to the bowl with the veggies, then pour the dressing over the salad and toss to combine.

  5. Serve cold.
