How To Make Chinese Tofu Soup Recipe

A delicious and healthy soup filled with soft tofu, vegetables and Asian flavors.

Serves:

Ingredients

  • 1 block of soft tofu, cubed
  • 4 cups vegetable or chicken broth
  • 1 cup sliced mushrooms
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cups chopped bok choy or spinach
  • Salt and pepper to taste
  • Sliced green onions and cilantro for garnish

Instructions

  1. Heat oil in a soup pot over medium heat, add onion, garlic and ginger. Sauté for 2 minutes.

  2. Add mushrooms and sauté until browned.

  3. Add broth, soy sauce, and sesame oil. Bring to boil and then lower heat and simmer for 10-15 minutes.

  4. Add cubed tofu and chopped bok choy or spinach to the pot. Simmer for another 5-10 minutes until the vegetables are tender.

  5. Taste and adjust seasoning with salt and pepper.

  6. Serve hot, garnish each bowl with sliced green onions and cilantro.
