How To Make Tostitos Chicken Enchiladas Recipe
A delicious and filling Mexican-style dish made with shredded chicken, cheese, and Tostitos chips.
Serves:
Ingredients
- 2 cups cooked shredded chicken
- 1 cup Tostitos Scoops
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1/2 tsp cumin
- salt and pepper, to taste
- 1 cup shredded Mexican cheese blend
Instructions

Preheat oven to 375°F.

In a large bowl, combine shredded chicken, chopped onion, minced garlic, cumin, salt, and pepper.

Add the Tostitos Scoops to the bowl, and toss to combine.

Pour a small amount of the enchilada sauce into the bottom of a baking dish.

Fill each Tostitos scoop with the chicken mixture and place in the baking dish.

Pour the remaining enchilada sauce over the Tostitos scoops.

Sprinkle shredded cheese over the top.

Bake for 30-35 minutes, or until the cheese is melted and bubbly.
