This tangy and zesty Mexican inspired salsa is the perfect dip for your tortilla chips or topping for your tacos.

Ingredients

  • 8 tomatillos, husks removed and rinsed
  • 1 jalapeno pepper, seeded and chopped
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat broiler.

  2. Cut tomatillos in half and place on a baking sheet, cut side down.

  3. Broil for 5-7 minutes or until charred.

  4. In a blender or food processor, add jalapeno, onion, garlic, olive oil, cilantro, lime juice, salt, and pepper.

  5. Pulse until finely chopped.

  6. Add broiled tomatillos and pulse until desired consistency is reached.

  7. Serve immediately or store in an airtight container in the refrigerator.
