Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tbsp vegetable oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 cup tomato sauce

Instructions

  1. Rinse rice in a fine-mesh strainer and set aside to drain.

  2. In a large saucepan, heat oil over medium-high heat. Add onion, garlic, and jalapeño and cook until softened.

  3. Add rice and stir to coat in the oil. Pour in chicken broth, tomato sauce, and spices. Stir to combine.

  4. Bring mixture to a boil, then reduce heat to low. Cover and let simmer for 20 minutes.

  5. After 20 minutes, remove from heat and let stand for 5 minutes. Fluff with a fork before serving.
