How To Make The Border Chicken Quesadilla Recipe
Tasty chicken quesadilla with melted cheese, served with sour cream and salsa.
Serves:
Ingredients
- 2 boneless chicken breasts, cooked and shredded
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups shredded Mexican blend cheese
- Sour cream, for serving
- Salsa, for serving
Instructions

In a large skillet, heat olive oil over medium-high heat. Add onion and red bell pepper and sauté until tender.

Add garlic, chili powder, paprika, cumin, salt, and pepper. Stir to combine.

Add cooked and shredded chicken to the skillet and mix well.

Place one tortilla in a large skillet over medium heat. Sprinkle 1/2 cup of shredded cheese onto the tortilla.

Add the chicken mixture on top of the cheese. Sprinkle another 1/2 cup of cheese on top of the chicken.

Place another tortilla on top of the cheese.

Cook for 2-3 minutes per side, until the tortilla is crispy and the cheese is melted.

Repeat the process with the remaining tortillas and chicken mixture.

Slice the quesadillas into wedges and serve with sour cream and salsa.
