Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp of paprika
  • 1 tbsp of cayenne pepper
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder
  • 2 tsp of dried thyme
  • 2 tsp of dried oregano
  • 2 tsp of kosher salt
  • 1/2 tsp of black pepper
  • 4 tbsp of unsalted butter
  • Lemon wedges, for serving

Instructions

  1. In a small bowl, mix the paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, kosher salt, and black pepper.

  2. Pat the chicken breasts dry and generously rub both sides with the spice mixture.

  3. Heat a cast-iron skillet over high heat until very hot.

  4. Add 1 tablespoon of butter to the skillet and allow to melt.

  5. Add 2 chicken breasts to the skillet and cook for 3 minutes per side, or until blackened and cooked through. Remove cooked chicken from skillet and set aside.

  6. Repeat Step 4 until all chicken breasts are cooked.

  7. Serve with lemon wedges.
