How To Make Ground Chicken Enchiladas

These enchiladas are made with ground chicken and a flavorful tomato-based sauce, then baked to perfection.

Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 8 corn tortillas
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat the olive oil over medium heat.

  3. Add the ground chicken, onion, and garlic, and cook until the chicken is browned and the onions are translucent.

  4. Add the tomato sauce, chili powder, cumin, and salt, and stir to combine.

  5. Let the mixture simmer for 10 minutes.

  6. In a separate pan, heat the tortillas until they are pliable.

  7. Ladle a little of the chicken mixture onto each tortilla, roll up, and place in a 9×13 baking dish.

  8. Top with the remaining chicken mixture and cheese.

  9. Bake in preheated oven for 20 minutes, or until the cheese is melted and bubbly.

  10. Serve hot.
