Ingredients

  • 10½ oz all-purpose flour
  • 4 oz unsalted butter, melted
  • 2 pcs eggs
  • 2 cups milk
  • lemon juice, or lime juice, from half a lemon or lime
  • 1 oz granulated sugar
  • 1 tbsp baking powder
  • ¾ tsp salt
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • cooking spray

To Serve:

  • 1 oz butter, per serving
  • ¼ cup honey, per serving, or maple or pancake syrup
  • 1 pc egg, per serving

Instructions

  1. Combine milk and lemon or lime juice and set aside for at least 30 minutes in a warm area.
  2. While waiting, preheat your waffle iron at medium heat and grease with cooking spray.
  3. In a large bowl, sift together flour, salt, baking powder, cinnamon, nutmeg, and sugar.
  4. Add your eggs, soured milk, melted butter, and vanilla extract. Whisk until evenly incorporated and smooth.
  5. Ladle roughly ¾ cup batter into your waffle iron and allow to cook on both sides, roughly 3 to 5 minutes each or depending on the manufacturer’s directions.
