How To Make Red Pepper Egg-In-A-Hole

This egg-in-a-hole recipe has four ingredients and is ready in half an hour. Slightly runny eggs and roasted bell peppers make for a light breakfast dish.

  • Olive oil,spray
  • 1bell pepper,cut into 4½” thick rings
  • 4eggs,large
  • salt and fresh pepper

Instructions

  1. In a large nonstick skillet, heat on medium heat.

  2. When hot, spray olive oil spray, add pepper and let it cook a minute, then add egg into the center of the pepper.

  3. Season with salt and pepper and cook for 2 to 3 minutes or until the egg whites are mostly set but the yolks are still runny.

  4. Gently flip and cook 1 more minute for over easy, longer for over well.
