How To Make Broccoli Quiche with Mashed Potato Crust

Make a delicious, healthy meal with this broccoli quiche. It’s made with a layer of potato crust, topped with broccoli, cheese, and eggs, then baked.

Preparation: 20 minutes
Cooking: 1 hour 15 minutes
Total: 1 hour 35 minutes

Serves:

Ingredients

  • 2large potatoes,peeled
  • 2cupsfresh broccoli,chopped
  • ¼cupmilk
  • ¼tspsalt
  • 1tbspolive oil
  • ½onion,chopped
  • 1cupcheddar cheese,shredded
  • 3eggs
  • 1cupmilk
  • ½tspsalt
  • ½tspground black pepper
  • ½tspground nutmeg

Instructions

  1. Preheat oven to 350 degrees F.

  2. Bring a large pot of salted water to a boil. Add potatoes and cook for about 15 minutes until tender but still firm. Drain.

  3. Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook for about 2 to 6 minutes until tender but still firm. Drain and set aside.

  4. Mash the potatoes with milk and salt. Brush a deep 9-inch pie dish with olive oil and press the potatoes in. Brush with remaining olive oil.

  5. Bake in preheated oven for 30 minutes or until lightly browned.

  6. Arrange onions, broccoli, and cheese in the potato crust.

  7. Whisk together the eggs, milk, salt, pepper, and nutmeg. Pour over broccoli and cheese.

  8. Bake in preheated oven for 30 to 40 minutes, until slightly puffed and cooked throughout. Allow to cool for 10 minutes before serving.
