How To Make Easy Breakfast Frittata
This breakfast frittata serves a fluffy and flavorful baked egg dish that combines bacon, cheddar cheese, and mixed veggies for a classic Italian meal.

Ingredients
- 1tbspolive oil
- 1½cupspotatoes,cooked or hash browns
- 1cupmixed vegetables,such as peppers and mushrooms
- 8slicesbacon,chopped, or ½ cup diced ham
- 2green onions,sliced
- ¼tsp*seasoned salt,(see Recipe Notes for recipe), or to taste
- ½tspdry mustard
- ¼tspblack pepper
- 8eggs
- ¼cuplight cream
- ½cupcheddar cheese,shredded
- 1tbspfresh parsley,or basil
Instructions

Preheat oven to 400 degrees F.

Add olive oil to an 8-inch skillet and cook vegetables for about 3 to 4 minutes until tender-crisp. Stir in potatoes and cook an additional 5 minutes.

In a medium bowl, combine eggs, light cream, dry mustard and seasonings.

Add bacon and green onion. Pour egg mixture over top and sprinkle with cheese and fresh herbs.

Bake for 14 to 16 minutes or until the eggs are set. Broil for 1 to 2 minutes.

Remove from the oven and cool 5 minutes before cutting. Serve warm.
