- ¼cupcanola oil,or vegetable oil
- 1cupsour cream
- 15ozcreamed corn
- 3large eggs
- ⅔cupyellow cornmeal
- 1cupall purpose flour
- ½cupgranulated sugar
- 1tbspbaking powder
- ½tspsalt

In a medium sized bowl, whisk together flour, cornmeal, salt, sugar and baking powder.

In a large bowl, stir together the oil, sour cream, creamed corn and eggs until well combined. Stir the dry ingredients into the wet, just until combined.

Pour the mixture into a 10-inch cast iron skillet . Bake at 425 degrees F for about 25 to 30 minutes.
