  • ¼cupcanola oil,or vegetable oil
  • 1cupsour cream
  • 15ozcreamed corn
  • 3large eggs
  • cupyellow cornmeal
  • 1cupall purpose flour
  • ½cupgranulated sugar
  • 1tbspbaking powder
  • ½tspsalt


  1. In a medium sized bowl, whisk together flour, cornmeal, salt, sugar and baking powder.

  2. In a large bowl, stir together the oil, sour cream, creamed corn and eggs until well combined. Stir the dry ingredients into the wet, just until combined.

  3. Pour the mixture into a 10-inch cast iron skillet . Bake at 425 degrees F for about 25 to 30 minutes.
