How To Make Rolo Stuffed Cookie Dough Bites

You won’t get enough of these delicious snickerdoodle cookie dough bites with a bit of a surprise brought by a Rolo candy stuffed inside each dough ball!

Serves:

Ingredients

  • cupsall-purpose flour,heat treated
  • 1tspcinnamon,plus an additional ¾ tsp
  • tspnutmeg
  • ¼tspsalt
  • ½cupsalted butter,softened
  • cuplight brown sugar,packed
  • ¼cupgranulated sugar,plus an additional 3 tbsp
  • ¼tspcream of tartar,optional
  • 3tbspheavy cream
  • tspvanilla extract
  • 28Rolo candies

Instructions

  1. In a mixing bowl, whisk together the flour, 1 teaspoon of cinnamon, nutmeg, and salt, set aside.

  2. In the bowl of an electric mixer, whip together the butter, brown sugar, ¼ cup of granulated sugar, and cream of tartar for about 4 minutes until pale and fluffy.

  3. Stir in the heavy cream and vanilla extract. Add the dry ingredients and mix until combined.

  4. In a separate small mixing bowl, whisk together the 3 tablespoons of granulated sugar and ¾ teaspoon of cinnamon.

  5. Scoop the dough out evenly 1 tablespoon at a time, then press one Rolo candy into the center of the scooped dough, and roll into a ball.

  6. Roll each dough ball into the cinnamon-sugar mixture.

  7. Chill or serve immediately.
