How To Make Hot Water Crust Pastry

  • cup lard
  • 1 tsp milk
  • ½ tsp salt
  • 60 ml boiling water
  • ¾ cup plain flour


  1. In a large bowl, combine lard, salt, milk and boiling water. Whisk with fork until smooth and creamy.
  2. Add flour and stir with round-the-bowl strokes until all flour is incorporated.
  3. Sprinkle a bit of water over a work surface and lay a large sheet of greaseproof paper over top.

  4. Place ½ of the pastry on the paper, flatten slightly and then cover with another sheet of greaseproof paper. Roll to the desired thickness with a rolling pin and repeat with another ½ of pastry.

  5. Use to line and lid a 23-cm pie dish or several individual molds.

  6. Cook as desired, and enjoy!
