Perfect for topping over bread, or side dish, this healthy cucumber bruschetta made with fresh cucumber, tomato, garlic, and olive oil won’t fail you.

Ingredients
- 1tomato,diced
- 1English cucumber,diced
- 1garlic clove,minced
- 3tbspbasil,fresh, chopped
- 1tbspolive oil
- 2tspred wine vinegar
- salt and pepper,to taste
For Serving:
- 1baguette
- olive oil
- 1clovegarlic
Instructions

Add all the topping ingredients to a bowl and gently toss to combine.

Slice the baguette into ¾-inch slices and brush the top of each slice with olive oil.

Broil for 2 to 3 minutes or until lightly toasted. Remove from the oven, and rub each slice of bread with the fresh clove of garlic.

Spoon the cucumber mixture over the bread to serve.
