How To Make Cucumber Bruschetta

Perfect for topping over bread, or side dish, this healthy cucumber bruschetta made with fresh cucumber, tomato, garlic, and olive oil won’t fail you.

Serves:

Ingredients

  • 1tomato,diced
  • 1English cucumber,diced
  • 1garlic clove,minced
  • 3tbspbasil,fresh, chopped
  • 1tbspolive oil
  • 2tspred wine vinegar
  • salt and pepper,to taste

For Serving:

  • 1baguette
  • olive oil
  • 1clovegarlic

Instructions

  1. Add all the topping ingredients to a bowl and gently toss to combine.

  2. Slice the baguette into ¾-inch slices and brush the top of each slice with olive oil.

  3. Broil for 2 to 3 minutes or until lightly toasted. Remove from the oven, and rub each slice of bread with the fresh clove of garlic.

  4. Spoon the cucumber mixture over the bread to serve.
