Ingredients

  • 1tbspbutter
  • 1cupall-purpose flour
  • ½cupsemolina flour
  • ½cupcornmeal,plus 2 tbsp for dusting
  • 2tspbaking powder
  • 1tspsalt
  • 4cupsfresh spinach,chopped
  • 3cupsbuttermilk
  • 1cupfeta cheese,brine-packed*, crumbled
  • 4eggs,lightly beaten
  • cupvegetable oil

Instructions

  1. Preheat oven to 400 degrees F. Butter 9×13-inch baking pan then sprinkle 2 tablespoons of cornmeal on bottom.

  2. Sift all-purpose flour, semolina flour, ½ cup of cornmeal, baking powder, and salt together in a bowl.

  3. Whisk spinach, buttermilk, feta cheese, eggs, and vegetable oil together in a separate large bowl. Stir flour mixture into spinach mixture just until pourable batter forms.

  4. Pour batter into prepared baking pan.

  5. Bake in preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.

  6. Serve and enjoy.

If you cannot get brined feta, use regular feta and increase salt to 2 teaspoons.
