How To Make Beef and Vegetable Casserole Recipe
A hearty and flavorful casserole filled with tender beef and vegetables.

Ingredients
- 1 lb beef chuck, cut into bite-sized pieces
- 1 onion, chopped
- 3 potatoes, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tbsp tomato paste
- 1 bay leaf
- 1 tsp dried thyme
- 2 cups beef broth
- salt and pepper, to taste
- 2 tbsp oil
Instructions

Preheat oven to 350°F.

In a large Dutch oven or oven-safe pot, heat oil over medium-high heat.

Season beef with salt and pepper and add to the pot. Cook until browned on all sides, then remove from the pot.

Add onions, garlic, potatoes, carrots, and celery to the pot and cook for 5-7 minutes.

Add tomato paste, bay leaf, dried thyme, and beef broth to the pot. Stir to combine.

Return beef to the pot and stir to combine.

Cover the pot and transfer to the oven. Bake for 1 hour.

Remove from oven and stir. Return to the oven and bake for an additional 30-40 minutes or until beef is tender.

Once done, remove from oven and let it cool for 5 minutes before serving.
