How To Make Greek Cucumber Cups
Oozing with refreshing Greek flavors, these cucumber cups are filled with tomatoes, olives, and feta cheese for an appetizer that’s perfect for summer.

Ingredients
- 2cucumbers
- ½cupcherry tomatoes,chopped
- 1cupchicken,cooked, chopped
- olives,to taste
- ⅓cupfeta cheese
- salt and pepper,to tase
- cilantro,chopped, to taste
- Greek dressing,to taste
Instructions

In a bowl, mix the cherry tomatoes, chopped chicken, olives, feta cheese, greek dressing, salt and pepper.

Peel the cucumbers partially, leaving thick stripes of skin going down the entire length of the cucumber. Trim the ends of the cucumbers and cut each cucumber into 1 to 1½-inch thick slices.

Scoop out the center of each slice with a melon baller or spoon, leaving a shell of flesh.

Scoop about 1 tablespoon of the chicken mixture into the cucumber cups.

Garnish with additional cilantro and feta, if desired.
