Black Bean & Mango Salsa Cups Recipe

These cute, colorful, and surely tasty salsa cups made with mango and black beans will take over the party in a whirlwind!

Ingredients

  • 12wonton wrappers
  • 1canRotel diced tomatoes and green chilis,drained
  • 15ozblack beans,1 can, drained
  • 1canwhole-kernel corn
  • 1mango,peeled, diced
  • ½cupgreen onions,chopped
  • ½tspground cumin
  • 1handfulcilantro,fresh, chopped

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Make the wonton “cups” by gently pressing each wrapper down into a mini-baking cup, careful to be sure that the corners are folded out and not in.

  3. Bake for 7 to 10 minutes, or until the cups are firm and slightly golden.

  4. Meanwhile, stir together all the remaining salsa ingredients in a bowl until combined. Once the wonton cups are ready, spoon the salsa into each cup, and serve immediately.

Recipe Notes

Feel free to substitute any of your favorite chunky salsa recipes with these. Just be sure that the salsas are well-drained, otherwise, the bottoms of the wonton cups will get soggy.
